Make espresso, mix it with honey and gin, add some oat milk and sparkling water, and pour it over ice. It fizzes and foams and tastes like a fancy brunch.
This started as a joke — 'what if we put gin in an oat latte?' — and turned into one of our favorite warm-weather drinks. The honey bridges the botanical gin and the toasty espresso, while oat milk adds body without heaviness. The fizz at the end makes it feel celebratory.

What You Need
Step by Step
Make honey syrup
Mix equal parts honey and warm water until dissolved. Let cool. (You can batch this ahead.)
Shake the base
10sAdd cooled espresso, gin, honey syrup, and oat milk to a shaker with ice. Shake for 10 seconds.
Strain over ice
Fine-strain into a tall glass filled with fresh ice.
Top with fizz
Top with sparkling water. Give one gentle stir to integrate. Don't over-stir or you lose the bubbles.
Pro Tips
Cool the espresso first — hot espresso + ice = watery drink.
Barista-style oat milk froths better if you want to float it on top.
A floral gin (like one with lavender or elderflower) works beautifully here.
For a non-alcoholic version, skip the gin and add an extra 0.5 oz honey syrup.
