The Process
Washed Processed
Freshly picked cherries are depulped within hours of harvest, then fermented in clean water tanks for 14–18 hours to break down the mucilage. After washing, the parchment coffee is spread on patios to dry under controlled shade for 10–12 days. This meticulous washed process strips away the fruit layer entirely, letting the bean's inherent sweetness and clean chocolate character shine through.
