The Process

Ripe cherries are handpicked at peak sweetness and laid out whole on raised African beds, where they dry slowly over 18–21 days under the Guji sun. Workers turn them regularly to ensure even drying. This natural process lets the fruit sugars ferment gently around the bean, developing the wild berry sweetness and brown sugar finish that makes this coffee impossible to put down.

Roaster's Note

We cupped a dozen Guji lots this season. This one stopped us mid-sip — the blueberry hit was unmistakable, but it's the brown sugar finish that sealed it. A natural that's clean enough for pour-over and bold enough for espresso. We looked at each other and said '¿por qué no?'
